We've got another quick and easy weeknight salmon bake with spinach and a rich, creamy sauce. With just a handful of ingredients, you can whip up a luxurious weeknight feast!
What you'll need:
- 1 tbsp Medella Coconut Cooking Oil
- 2 salmon fillets
- 2 cloves of garlic, sliced
- 170g baby spinach
- 1 lemon, zested
- Juice of 1/2 lemon
- 1/2 lemon thinly sliced
- 5 tbsp milk
- 75g cream cheese
What you'll need to do:
- Heat oven to 200ºC
- Heat half the oil in a frying pan and lightly brown the salmon on both sides, starting with skin side.
- Transfer the salmon to a plate, wipe out the pan and heat the remaining oil. Cook the garlic for 30 seconds or until fragrant, then add spinach, lemon zest and lemon juice. Season to taste.
- Add cream cheese and 2 tbsp of milk and cook until spinach has wilted.
- Tip the spinach mix into an ovenproof dish and top with salmon fillets and lemon slices.
- Bake in over for 5-8 minutes until salmon is cooked through.
- When you hear the oven ding, get ready to feast!
