Easy Breakfast Parfait with Virgin Coconut Oil

Nothing spells a good morning like a good breakfast. Just load up a tray with your favourite mixed nuts of choice with a drizzle of maple syrup and Medella Organic Virgin Coconut Oil, pop it in the oven and you'll get fresh, fragrant granola! Details below:


What you'll need:

  • 1/4 cup mixed nuts (think walnuts, cashews, almonds)
  • 2 tbsp seeds (try pumpkin, sunflower)
  • 1/2 tspn Medella Organic Virgin Coconut Oil
  • 1/8 cinnamon powder
  • 1 tspn maple syrup
  • 2 tbsp desiccated coconut
  • 1/2 cup of fruits (strawberries, blue berries, even raisins would work)
  • 1/4 cup of greek yogurt

What you'll need to do:

  1. Pre-heat oven to 150ºC
  2. Mix nuts and seeds in a bowl.
  3. In a separate bowl, combine Medella Organic Virgin Coconut Oil and maple syrup.
  4. Pour liquid mix into nuts and seeds and stir to combine. Make sure all nuts and seeds are well coated.
  5. Add cinnamon powder and stir through.
  6. Spread out the granola mix evenly on a baking tray.
  7. Bake for 6-8 minutes or until golden brown. Set aside to cool before serving.
  8. Assemble parfait by layers. We like to start with yogurt, followed by toasted granola mix, and berries. Repeat as needed.
  9. Take a quick picture for social and dig in!
