Nothing spells a good morning like a good breakfast. Just load up a tray with your favourite mixed nuts of choice with a drizzle of maple syrup and Medella Organic Virgin Coconut Oil, pop it in the oven and you'll get fresh, fragrant granola! Details below:
What you'll need:
- 1/4 cup mixed nuts (think walnuts, cashews, almonds)
- 2 tbsp seeds (try pumpkin, sunflower)
- 1/2 tspn Medella Organic Virgin Coconut Oil
- 1/8 cinnamon powder
- 1 tspn maple syrup
- 2 tbsp desiccated coconut
- 1/2 cup of fruits (strawberries, blue berries, even raisins would work)
- 1/4 cup of greek yogurt
What you'll need to do:
- Pre-heat oven to 150ºC
- Mix nuts and seeds in a bowl.
- In a separate bowl, combine Medella Organic Virgin Coconut Oil and maple syrup.
- Pour liquid mix into nuts and seeds and stir to combine. Make sure all nuts and seeds are well coated.
- Add cinnamon powder and stir through.
- Spread out the granola mix evenly on a baking tray.
- Bake for 6-8 minutes or until golden brown. Set aside to cool before serving.
- Assemble parfait by layers. We like to start with yogurt, followed by toasted granola mix, and berries. Repeat as needed.
