Christmas Sugar Cookies

Merry Christmas Eve! If you've got some last minute baking to do, fret not! The holidays is nothing without sugar cookies!

What you'll need:

Direction:

  1. Preheat oven to 180° Celcius
  2. In a medium mixing bowl add the butter, granulated sweetener, egg, baking powder, vanilla extract and salt.
  3. Blend with handheld blender for 2 minutes on medium speed 
  4. Add Medella Organic Coconut Flour and blend until combined
  5. Allow the dough to sit for 5 minutes 
  6. Add 1 tbsp of tapioca flour and knead dough until firm. If it is sticky or not firm, add another tbsp of tapioca flour
  7. Dust a surface with tapioca flour and roll out to desired thickness
  8. Use cookie cutters and cut desired shapes and place on cookie sheet and bake for 8 minutes
  9. Allow the cookies to be cool before frosting
