Superfoods Combo: Grilled Salmon with Coconut Curry

We're kicking off a series of superfood recipes starring some of Medella's MVPs. First up on our menu, grilled salmon with coconut curry. This dish features Superfood No. 1: salmon!

What's so super about salmon?

  1. High in omega-3 fatty acids that supports cardiovascular health and brain function.
  2. High in vitamins and minerals that's essential for energy metabolism and proper tissue formation.
  3. High in protein that promotes healthy bones and joints.


Let's get to the recipe; you'll be making a dry rub for the salmon, and you'll be prepping some ingredients for the actual curry. So let's start with the rub:

Let's get cooking!

  1. Get the oven ready: Preheat the oven to a high 250ºC. Line a baking sheet with foil. Place the oven rack close to the top.
  2. Salmon Rub: Mix the spices and the coconut cooking oil to make a paste. Place the salmon skin side down on the baking sheet. Rub the paste liberally over the top part of the salmon. Bake for 6-12 minutes.
  3. Curry: Heat the coconut cooking oil over medium heat. Add garlic, ginger, and lemongrass; sauté for 5 minutes. Add coconut sugar and curry powder; sauté for 3 minutes. Add the coconut milk mix. Season with soy sauce and lime juice to taste. Add spinach; stir into the sauce until wilted.
  4. Serve: Place salmon over rice. Cover with sauce, lime juice, and fresh herbs.
