We're kicking off a series of superfood recipes starring some of Medella's MVPs. First up on our menu, grilled salmon with coconut curry. This dish features Superfood No. 1: salmon!
What's so super about salmon?
- High in omega-3 fatty acids that supports cardiovascular health and brain function.
- High in vitamins and minerals that's essential for energy metabolism and proper tissue formation.
- High in protein that promotes healthy bones and joints.
Let's get to the recipe; you'll be making a dry rub for the salmon, and you'll be prepping some ingredients for the actual curry. So let's start with the rub:
What you'll need for the salmon marinade:
- 1 1/2 lbs. salmon
- 1 tablespoon Medella Organic Coconut Sugar
- 1 teaspoon curry powder
- 1/2 teaspoon onion paste (ground onions)
- 1/2 teaspoon garlic paste (ground ginger)
- 1/2 teaspoon salt (or to taste)
- 1–2 teaspoons Medella Coconut Cooking Oil
Next up, let's get to the ingredients for the curry:
- 1 tablespoon Medella Coconut Cooking Oil
- 2 cloves garlic
- 1 small thumb-sized ginger, peeled
- 1 tablespoon of pounded lemongrass paste
- 1 tablespoon Medella Organic Coconut Sugar
- 1 tablespoon curry powder
- 1 cup of water with 5 tbsp of Medella Organic Coconut Cream Powder
- 2 tablespoons soy sauce
- lots of lime juice and zest
- 3 cups spinach, chopped
- cilantro, basil, mint, or other fresh herbs
Let's get cooking!
- Get the oven ready: Preheat the oven to a high 250ºC. Line a baking sheet with foil. Place the oven rack close to the top.
- Salmon Rub: Mix the spices and the coconut cooking oil to make a paste. Place the salmon skin side down on the baking sheet. Rub the paste liberally over the top part of the salmon. Bake for 6-12 minutes.
- Curry: Heat the coconut cooking oil over medium heat. Add garlic, ginger, and lemongrass; sauté for 5 minutes. Add coconut sugar and curry powder; sauté for 3 minutes. Add the coconut milk mix. Season with soy sauce and lime juice to taste. Add spinach; stir into the sauce until wilted.
- Serve: Place salmon over rice. Cover with sauce, lime juice, and fresh herbs.
