Oatmeal and raisins are like a match made in heaven. @eatwkriss has developed a crispy yet chewy cookie that is 100% vegan. Details below:
Ingredients:
- 25 ml Medella Coconut Cooking Oil
- 30 ml non-dairy milk
- 3 ml vanilla
- 45 g Medella Organic Coconut Sugar
- 60 g all-purpose flour
- 1 g baking soda
- 1 g salt
- 60 g rolled oats
- 30 g raisins
- 15 g chia seeds
What you'll need to do:
Preheat the oven to 200°C and line a baking sheet with parchment paper.
In a small bowl whisk coconut oil, non-dairy milk, vanilla and coconut sugar together. Sift in flour, baking soda, salt and combine with a spatula. Fold in oats, raisins and chia seeds, being careful not to overwork the dough.
Let the dough rest in the fridge for 10 minutes OR bake straightaway. Divide into 6 equal pieces (45 g each), roll into balls and arrange on the baking sheet. Press down with your fingers until ¼-inch thick (the cookies won't spread while baking).
Bake for 15 minutes or until golden brown. Transfer to a wire rack to cool slightly.
Serve warm. Enjoy!
