@eatwkriss' Vegan Oatmeal Raisin Chia Cookies

Oatmeal and raisins are like a match made in heaven. @eatwkriss has developed a crispy yet chewy cookie that is 100% vegan. Details below:

What you'll need to do:

  1. Preheat the oven to 200°C and line a baking sheet with parchment paper.

  2. In a small bowl whisk coconut oil, non-dairy milk, vanilla and coconut sugar together. Sift in flour, baking soda, salt and combine with a spatula. Fold in oats, raisins and chia seeds, being careful not to overwork the dough.

  3. Let the dough rest in the fridge for 10 minutes OR bake straightaway. Divide into 6 equal pieces (45 g each), roll into balls and arrange on the baking sheet. Press down with your fingers until ¼-inch thick (the cookies won't spread while baking).

  4. Bake for 15 minutes or until golden brown. Transfer to a wire rack to cool slightly.

  5. Serve warm. Enjoy!
