Coconut Flour Peanut Butter Blondie

If you usually find yourself at the bottom of a peanut butter jar, this recipe is for you! All the very best qualities of a rich, gooey, fudgy brownie, but with a timeless peanut butter twist! Follow along to make your very own batch of peanut butter blondies:

What you'll need:
95g Medella Coconut Cooking Oil
130g creamy peanut butter
80g Medella Organic Coconut Sugar
2 eggs
1 tspn vanilla extract
28g Medella Organic Coconut Flour
1 tspn baking powder
100 g chocolate chips

1. Preheat oven to 180°C/355°F
2. Line base of 8" square tin with baking paper and grease the sides.
3. Beat Medella Coconut Cooking Oil and peanut butter at medium speed, till smooth.
3. Add Medella Organic Coconut Sugar and continue to beat till well combined.
4. Add eggs one at a time and vanilla. Mix till just combined.
5. Add Medella Organic Coconut Flour and baking powder and beat on low speed for about 5 minutes till well combined.
6. Stir in chocolate chip and pour into pan.
7. Bake for approx 20 mins. Blondie is done when test skewer comes out clean.
9. Let blondie cool before cutting.

Pro Tip:
If you're a fan of coconuts, substitute Medella Coconut Cooking Oil with Medella Organic Extra Virgin Coconut Oil for a stronger coconut fragrance.
