Low-carb Coconutty Cauliflower Rice

Low carb meals don't have to be bland. We've got a cauliflower rice dish that can be served as a side to anything, really.

What you'll need:

  • 1 medium head cauliflower, separated into florets
  • 2 tablespoons of Medella Coconut Cooking Oil
  • 1/4 cup of coconut milk (you can mix Medella Organic Coconut Cream Powder with water for this)
  • 3 spring onions, minced
  • 3/4 teaspoons of turmeric powder
  • 3/4 teaspoon of salt
  • 1/4 teaspoon o freshly cracked black pepper
  • 1/4 cup fresh cilantro, chopped
  • 1/2 red chilli, sliced

What you'll need to do:

  1. Pulse the cauliflower florets in a food processor or blender until the size of couscous or rice.
  2. Add the coconut oil, coconut milk, spring onions, turmeric, salt and pepper in a large skillet and stir-fry over medium high heat.
  3. Add cauliflower and stir until dry and golden brown.
  4. Season to taste and serve as rice.
