Low carb meals don't have to be bland. We've got a cauliflower rice dish that can be served as a side to anything, really.
What you'll need:
- 1 medium head cauliflower, separated into florets
- 2 tablespoons of Medella Coconut Cooking Oil
- 1/4 cup of coconut milk (you can mix Medella Organic Coconut Cream Powder with water for this)
- 3 spring onions, minced
- 3/4 teaspoons of turmeric powder
- 3/4 teaspoon of salt
- 1/4 teaspoon o freshly cracked black pepper
- 1/4 cup fresh cilantro, chopped
- 1/2 red chilli, sliced
What you'll need to do:
- Pulse the cauliflower florets in a food processor or blender until the size of couscous or rice.
- Add the coconut oil, coconut milk, spring onions, turmeric, salt and pepper in a large skillet and stir-fry over medium high heat.
- Add cauliflower and stir until dry and golden brown.
- Season to taste and serve as rice.
