Keto-friendly Pumpkin Soup

Keto-friendly Pumpkin Soup

As a side, or a dip or a warm comfort, this pumpkin soup recipe is yummy, low-carb and keto-friendly! Follow along here:

What you'll need:

  • 450g of pumpkin puree
  • 4 cups chicken stock
  • 1/2 tspn salt
  • 1/2 tspn pepper
  • 1/2 tsp garlic powder
  • 1 tsp fresh thyme
  • 1/2 cup heavy cream
  • 1/4 cup sour cream
  • 2 tbsp chopped parsley

What you'll need to do:

  1. Add pumpkin puree, chicken broth, salt, pepper, garlic and thyme to a pot. Stir to combine.
  2. Bring the mixture to a boil, then reduce heat and simmer for about 10 minutes to give the flavours time to mix.
  3. Remove from the heat  and add the heavy cream.
  4. Garnish with sour cream and parsley.
