Deep-Fried Oreo Pancakes

Whoever said diet starts in the new year hasn't tried this delightful oreo pancakes by @misstamchiak deep-fried in Medella Coconut Cooking Oil.

What you'll need:

  • 2 cups pancake mix
  • 2/3 cup milk
  • 1 large egg
  • 1 tablespoon Medella Coconut Oil
  • 18 Oreo cookies
  • additional Medella Coconut Oil for frying
  • confectioner’s sugar (optional)

What you'll need to do:

  1. Freeze the Oreo cookies for about an hour.
  2. Fill a heavy cooking pot with 2-3 inches of Medella Coconut Oil.
  3. Combine pancake mix, milk, egg, and 1 tablespoon Medella Coconut Oil in large bowl. Whisk until smooth.
  4. Dip a cookie in the mixture and completely cover it so you can’t see through the batter.
  5. Carefully drop the coated cookie(s) in the hot oil and fry on each side just until golden brown.
  6. Remove cookie from oil and dust with confectioner’s sugar. Enjoy while still warm!
